2 cups white flour
1 1/2 cups Odlums extra-coarse ground wholemeal flour
1 teaspoon baking soda
1/3 cup brown sugar
1/2 cup oat bran (optional)
1/2 cup ground flax seed (optional)
1/2 teaspoon salt
20 ounces (2 1/2 cups) buttermilk
1 tablespoon whole flax seeds


Preheat oven to 350F. Mix all dry ingredients well, then add buttermilk and mix well.

The consistency of the mixture should be like a heavy pancake batter.

Put into a large-size (approx. 8½ x 5 inches), greased loaf tin and sprinkle flax seeds on top.

Bake for 55 minutes, turning oven off for last 5 minutes.

Remove from oven and cool on a wire tray. Note: Silicone loaf pans yield an excellent result.
